
Does anyone else wonder if it is really worth paying $4.00 a dozen for eggs that are organic, cage-free, grass-fed, and so on, and so on??? Seriously, when you can get a dozen eggs for 2 bucks or less, why pay so much more?
Let me start by saying that I have my own opinion, and that is all it is. I have arrived at my opinion after completing lots of personal, hands on research. In other words, I have purchased a LOT of those expensive eggs. All brands, all colors. I have baked with them, I have fried them, scrambled them, and boiled them. What have I concluded? I have concluded that there IS a difference. Sometimes the difference is important, and sometimes it isn't.
For boiling eggs, the expensive ones seem ridiculous. The shells are REALLY hard to peel away from the egg and they end up UGLY. Especially bad for any Easter egg coloring. The shells also don't absorb the color as well. Use the cheap white ones for boiling the eggs!
For cooking with the intent to eat right off the plate, the expensive ones taste much, much better. The yolks are sturdier and the whites are thicker. A noticeable difference here.
If you are gonna throw eggs into a batter, I am not sure the expensive ones are the way to go. I lean towards using the regular old fashioned cheap ones.
I actually like to buy the ones in the middle of the price range. The large, brown ones that are cage-free, but not necessarily jacked up on omega-3's, beta carotene, and vitamin E...........
